Fall Inspired Pumpkin Spice Baking
In my quest to fully embrace the pumpkin spice season I have been trying a few fall inspired recipes. So far my family has approved all the pumpkin recipe trials. The first of my experiments was a Pumpkin Ginger Molasses cookie. Any excuse to use molasses and ginger always attracts me. These cookies are soft and flavorful. They taste like lightly sweeter ginger snaps.

The second cookie is a pumpkin snicker doodle. I have fond memories of my grandma’s Eleanor’s snicker doodle cookies. When I discovered a Pumpkin Spice Snicker Doodle I couldn’t resist. Surprisingly there is no pumpkin in the cookie. You just use pumpkin spice in the cookie itself as well as rolling it in the spice before cooking. These cookies were equally as soft and family approved.

My go to fall cookie is a family favorite since I was a kid. We call them Giant Chocolate Chip Oatmeal Pumpkin cookies. The oatmeal makes them in my opinion. They are always soft and not too sweet. The best part of all is getting to decorate them with a jack-o-lantern face or other Halloween themed decoration. We love to bring them to the firehouse and let them decorate their own faces.
